CHICKEN WITH CILANTRO AND PEPPERS
1 whole cut up chicken or 6 legs with thighs
Juice from 2 lemons
1 1/2 tsp. finely minced garlic or use
prepared marred garlic
1 bunch cilantro, chopped
1 whole red bell pepper
1 whole green bell pepper
Salt and pepper to taste
Olive oil
Skin chicken pieces. Rub chicken pieces with
garlic. Pour lemon juice over chicken pieces.
Sprinkle chopped cilantro over chicken. Cut
peppers into long strips and place over chicken pieces. Add salt and pepper to taste. Lightly
drizzle chicken pieces with olive oil or your
favorite light salad oil. Preferably let sit for 2 hours
in refrigerator. Bake at 350 degrees with foil cover
for 1 hour. Remove cover; baste and cook until a golden brown.
